About Atelier Pacific ★★★
Atelier Pacific is Silverdale’s flagship dining experience, built around a simple idea: California tastes best when you stop trying to make it taste like somewhere else.
Executive Chef Adrian Vale works closely with small farms, coastal fisheries and independent growers across Northern California, allowing each season — and occasionally each week — to reshape the menu. Local ingredients are treated with restraint rather than excess, resulting in dishes such as butter-poached Coastal Abalone with sweet corn and chanterelles, Monterey Black Cod with charred spring leek and preserved Meyer lemon, and dry-aged Sonoma Duck finished with a California Pinot Noir jus.
There is no fixed signature menu in the traditional sense. Dishes disappear when an ingredient disappears, new ones arrive when something exceptional becomes available, and returning guests may find a noticeably different experience only a few weeks later.
Vale describes his cooking as less about invention than interpretation: “A plate should never explain itself. It should leave you with a feeling you didn’t have when you sat down.”
The dining room follows the same philosophy. Warm woods, subdued lighting and an understated open bar keep the space intimate while the food remains the focus. Service is deliberate without becoming ceremonial, with optional wine pairings built predominantly around California producers.
Atelier Pacific isn’t intended to be an everyday restaurant. It is Silverdale’s place for the long dinner, the anniversary, the important conversation, or simply the night when dinner itself is the reason for going out.
